Tuna Mac n cheese “cold salad”?

Yeah… still quite warm.
1st cooked bag of elbow noodles with “3 pads of butter, tbsp of Himalayan salt (slightly heeped) & *some canola oil (~4tbsp)”
Strained and cooled, mostly?

Then while straining the square pan sat on top of the boiling spot and melted butter to coat the bottom of pan. The noodles went in there when done straining and draining.

3 cans of (drained water) tuna
2 cans of peas
1 small palm full of chopped onions
1 small palm full of dill pickle slices
At least a tsp of each: chili powder, garlic powder, paprika, chili & lime powder mix
2 heeping handfuls (~1.5 cups) chopped celery
~ 1/2 pint of sour cream (what was left in it)
~ 1/3 pint of mayonnaise (also what was left in it)

Now, I need to back you up to a “warming / soaking” part that the veggies got in the pot that was the boiling water from the elbows.

Turned on another burner sat the pot over it on 5(of 10) and let them all warm up

In that “just shy of boiling water mix” for the entire time of rinsing the elbow mac, AND the deciding what seasoning to mix with the veggies & tuna.

Once the veggies were drained of 98% of that water, the actual mixing up of all the flavors with veggies and tuna happened With that burner off.

That’s the way you see the mix in the pots.

Caveat!!!!
I wanted some cheese to go in this mix but, my friend didn’t. So I put a handful of Mexican style shredded cheese blend in the bowl, added 3 pads of butter, a couple do-lips of mayonnaise & 2 small single servings of bleu cheese salad dressing and stirred them

Up. Then I Really broke one of my cardinal rules…… I used the microwave for 30 seconds…. Twice ….. to start the cheese mix to melt.



Stirred it up and then added one ladle of the tuna mix and one ladle of the elbows.

Stirred that all together and the taste was surprisingly yummy. The mix totally ghosted the tuna. The cheese and seasoning mix was like a cross between Mac-n-cheese with a slightly dill accented sharp cheddary cheese sauce.

I added ~1/3 can pumpkin to the pasta sauce. Chopped up the whole Avocado & 2 sausages then mashed it all into the sauce.

The pumpkin adds a very slight mildness to the tomato acidity.

And the avocado squished into it is a nice thickening to it as well.

Fish n chips…
Version 1 several days ago (no pictures) was quite yummy. So version 2, tonight was almost as good when I added the *chips* under the fish. Too many chips dropped the flavors into the too bland territory for me.

Sprayed a light coat of canola oil on pan.
A solid layer of the salad mix about 1/2 the bag as I recall. It will be as thick as the thickest part of the fish filets.

Spray to still totally frozen tilapia filet with a generous coat of canola oil. Sprinkle a mild layer of black pepper crushed fine.
Flip it over and repeat on top side of filets.
Tear/cut open and equally drizzle the “salad dressing” over both filets then the last little bit drizzle around the filets.
Slide into toaster oven for at least 10 minutes at 350.
Pull out to check the pink level of the fish in the thick zone. Tonight I had to add 5-6 more minutes to reach the *done* level for me.

Will I do this again? Heck yes.
The bag of tilapia filets from Sam’s Club is ~$13 for ~3lbs (at least 12 filets as I recall this time. So this meal is about $5.00 if I round up.

Version 3 will be 1/2 the bag of chips and shredded almonds in the mix.
 
GF pancake mix on steroids version (?) [I initially thought 52.11 for the 11th month in my 52 year on earth; then thoughts, “Wait. I was 8 when first made breakfast from Scratch w/Mom & Baba.” So, 52-8 = 44 & that will make this mix version 44.11?



~1cp pancake mix
~1TBSP of cinnamon
~1/2cup canola oil (last time coconut oil)
~1 cup oatmeal
~1 1/4 cup flour
~1/4 cup Teff flour
~1 tsp baking powder
~1/3 tsp Himalayan salt
~2 cups of almond milk
6-7 eggs
~1/4 cup cocao nibs
~1/4 cup chia seeds
~1/2 cup crushed graham cracker
~1/2 cup unsweetened coconut flakes
~1 cup unsweetened apple sauce
~ 1/8 cup honey

And let it sit overnight in fridge.

So far, about normal Looking and smelling. So.. definitely in the correct direction…. Those accents are: Craisins, hatch chili dried pineapple chunks & scutterbotch morsels…

And a very late start to dinner tonight…. Yeah it’s after 10PM here.

Rotisserie chicken was in instapot getting steamed a few hours ago.

Created 2.5 cups of broth.

Making rice is usually 2cups water to 1 cup rice as I recall. So, 1 cup broth & 3 cups water… with this picture of added accents:
Entire bunch of cilantro
A modest sprinkle of Himalayan salt
A slightly more modest sprinkle of pepper
Around a heaping tbsp of the garlic & ginger
About a heaping tsp of curry seasons blend

Still have to de-bone the meat… in a short while. Had to stop the rice almost 1/2 way through when I realized that it only had 2 cups water & 1 cup broth!
/two handed facepalm

Not sure which veggies I’ll make yet….

Pantry-Pahloooza burrito
1st) 2 Frozen rotisserie chickens wedged in the instapot to be steam-thawed & make some broth
Below them are two ziplock bags of previously cCopped bell peppers (green, orange & red) &
Chopped white onion

“Pulled rotisserie chicken”

Cilantro finely chopped
Romaine shredded
Thinly Sliced cucumbers

Bell peppers & onions chopped and PSI-cooked/soaked in the rotisserie chicken broth
 
You may have heard of “Bagels & lox” well. It in and of itself is a amazingly delicious treat.

Not to be held back… I have done the Pantry-Pahloooza” version 3.0 of this yummy mix.

2.0 -2.9 have been done before but, sadly not documented.

This is a salmon filet baked with this Cilantro & Lime mix (I spray oil on the surface when the meat is frozen to get the seasoning to *stick to it* while thawing/cooking.

Well this here will be the Tex-mex & Lox.

The last slices of the Jalapeño cheese loaf I got a while back from Kroger. (mgr special of course)

Buttered and slightly toasted

Mixed in the small glass bowl 50/50 cream cheese & that Yummy Gouda Pimento cheese blend. (That’s a winner by itself)

Spread a modest layer of the cheese mix than a slab of the salmon.

Even the cheese with a fork full of the extra salmon was quite good without the bread!

Waffle-cake hybrid version 44.12

Refined a bit more with few ingredients.
1 cp GF flour
1cp basic flour
1/4 cp graham cracker crumbs
1/4 cp coconut flakes
1/4 cp hemp seeds
1/2 cp cacao nibs
1 cp pumpkin purée
1/4 tsp baking powder & soda
1 lg pinch Himalayan salt
~1/3 cp sugar
8 eggs
2 cp almond milk
~1/3 cp coconut oil
