I've read about all this, but been holding off taping her toes because it's the first time I've come across this. You could also be right about a leg brace too - I'm not sure at the moment.

I understand your dilemma, and could be you're right (I'm not an expert at this), but I wouldn't want to seal off the wound totally, as that, for me, sounds just as bad, if not worse. If it was my problem, I'd take the chance of it getting through the wet weather OK.
I think the Bordeaux mix is a good idea, but I wouldn't be to quick to use a latex paint. Think about if you had a deep cut on your skin, you'd want it to breathe, right? Rubber solution would seal it! That includes sealing any bad stuff in!
