Any Home Bakers Here?

I found short cake recipe on all recipes site
Going to make my first one next day or so.
Shortcake

6 cups fresh berries
⅓ cup white sugar
2 ¼ cups all-purpose flour
¼ cup white sugar
1 tablespoon baking powder
¼ teaspoon salt
½ cup butter cold unsalted butter, cut into ½-inch pieces
1 large egg, lightly beaten
¾ cup half-and-half
2 teaspoons vanilla extract, divided
1 ½ cups whipped heavy cream
¼ cup powdered sugar

Preheat the oven to 425 degrees F (220 degrees C). Grease an 8-inch cake pan with butter and lightly dust with flour.

Slice the berries and toss them with 1/3 cup of white sugar. Set aside.
Combine flour, 1/4 cup of white sugar, baking powder, and salt in a medium bowl;
cut in butter with a pastry blender or two knives until mixture resembles coarse crumbs. Make a well in the center of mixture; add beaten egg, half-and-half, and 1 teaspoon vanilla. Stir mixture until just combined and no dry spots remain, being careful
not to over mix.

Spoon batter evenly into prepared cake pan.
Bake in the preheated oven until a toothpick inserted into the cake comes out clean and top is golden brown, about 18 minutes. Let cool partially in cake pan, about 10 minutes. Flip cake onto a clean work surface.

Meanwhile, beat heavy cream, powdered sugar, and remaining 1 teaspoon vanilla with an electric mixer on medium-high speed until soft peaks form, about 3 minutes. Set aside.

Cut partially cooled cake in half horizontally, making 2 layers; set top layer aside. Drain reserved berries in a colander placed over a small bowl, reserving any juice. Brush berry juice evenly over top of bottom cake layer. Evenly arrange ½ of the drained berries over bottom layer of cake.

I don't bake as much as I used to. I've been on the carnivore diet this last year (including dairy), but we like making this cake called "Oopsie Cake."

I just had foot surgery and my partner is out of town, so my sister came over and I am making her cake today!

Preheat your oven to 300°F

It uses 8 eggs that you separate, then whip the whites to stiff peaks (add a pinch of cream of tartar if you want, but I usually find I don't need it.) 20241112_130344.jpg 20241112_131919.jpg

Add 1 block of cream cheese to the egg yolks, a pinch of salt and a splash of vanilla, then blend that up until it's not chunky.

Gently fold in the yolk mixture into the whites and pour into two 10" greased pie pans.

I bake the cakes for 1/2 hour or until the tops are just golden brown.

To make the frosting, all you do is whip up one pint of heavy cream (I add a splash of vanilla and a pinch of salt to it as well). I run a spatula around the edges of the cakes and work them slowly out of the pans one at a time, covering both with whipping cream and stacking them so they make a 2 layered cake.

It's not sweet, so people who aren't doing low or no carb might want to add some berries or something, but I've brought it to a lot of functions and people seem to receive it well. I hope you guys enjoy it if you try it!
