Any Home Bakers Here?

Bread just came out of the oven. I tweaked it a little, we'll see what happens. The recipe calls for 14 cups of bread flour, and last time I substituted 3 cups of rye flour, and honey for sugar. It came out moist, and denser. Today I substituted 4 cups of rye flour, honey for sugar again.

I had checked my Joy of Cooking so I knew that I had to use less honey than the 1/4 cup of sugar called for in my bread recipe. I used just a little less than 1/4 cup, and the bread is moist and delicious.
