Any Home Bakers Here?

We ran out of bread yesterday ( a common occurrence in our household 🤪) so I prepared a bread yesterday evening, since my sd was old and I didn’t have 24 hrs. time I put in a little bit of yeast, baked it this morning, what I found very interesting is is that if I bake this purely with sd, I get 2 loaves out of it, in a hurry and with yeast, it was only enough for 1 loaf of bread 🤔

Just ordered some new grains from the mill, of course it is before Christmas. So shipping takes longer than usual, also, the postal service is totally behind schedule, even though Christmas isn’t for another 3 weeks 😂 but we are lucky, in Canada, it is on strike, again 🙄 I think last year they were also on strike and I remember when we lived there, they were on strike for ages 🤪 ohh, to be a postal worker in Canada 😅

Since we are on topic of bread. Sourdough :old I made these 4 loaves a week ago.
About 300 grams Sourdough starter, 700 grams balance milk.
For flour,,, I used about 300 grams Rye, and about 700 grams Bread flour.
I baked at lower heat,, 400°F, than my usual 450 to 500 for breads.
When pokey thermometer read 205°F, took out of oven.
Tasted delish,.:drool:drool:drooland was soft when warm. Crust as crispy:frow

I'm not sure if I posted my non-machine GF bread recipe. If I did, here it is again.

Non-bread machine GF bread

Ingredients

3 cups (420 g) Namaste GF flour (that’s the brand I have on hand)
2 ¼ teaspoons xanthan gum (omit because Namaste contains it)
3 1/8 active dry yeast (not instant)
¼ teaspoon cream of tartar
2 tablespoons (25 g) granulated sugar
2 teaspoons (12 g) kosher salt (I used regular table salt)
1 ½ cups warm milk (about 95°F)
4 tablespoons (56 g) unsalted butter melted and cooled
1 teaspoon apple cider vinegar
2 (50 g) egg whites at room temperature

Instructions

Grease a 9-inch x 5-inch loaf pan (or slightly smaller) and set it aside.

In the bowl of a stand mixer fitted with the paddle attachment, place the flour, xanthan gum (if needed), yeast, cream of tartar and sugar. Whisk together with a separate, handheld whisk. Add the salt, and whisk again to combine.

Add the milk, butter, vinegar and egg whites, mixing on low speed after each addition. Scrape down the sides of the mixer bowl as necessary during mixing.

Turn the mixer to medium-high speed and mix for about 3 minutes. The dough will be thick, smooth and quite wet, almost a batter.

Scrape the dough into the prepared loaf pan. Using a wet spatula, smooth the top.

Cover the dough with lightly buttered waxed paper and allow it to rise in a warm, draft-free place for 30 to 45 minutes or until it’s about 150% of its original size.

When the dough has nearly reached the end of its rise, preheat the oven to 350° F. Remove the plastic wrap, and using a sharp knife or lame slash the top of the loaf about 1/4-inch deep. (I didn’t do that.)

Place the pan in the center of the preheated oven. Bake for 45 minutes to 1 hour, or until the internal temperature of the bread reaches about 195°F on an instant-read thermometer. The outside will form a thick, brown crust. *Check at 35 minutes* mine was done by then.

Remove the loaf from the oven, and allow it to cool for about 10 minutes in the pan before transferring to a wire rack to cool completely.

Somehow everything breaks down right now 🙄 it started last year with the refrigerator, furnace also broke down, washing machine, dishwasher, 4 weeks ago the coffeemaker (hubbys) broke down, I made coffee for him the old fashioned way till I could finally get a 2. hand coffeemaker 😅 today, while the mill was milling the rye, I was wondering why it came in spurts, I touched the flour and it was HOT, then the mill gave a strange sound and stopped( didn’t start up again 😟) 🤷🏻‍ I “milled” the rest of the grains in a food processor ( thank God I have a lot of gadgets 😅) the mill is 25 years old, so I am not mad it broke down, but does it have to be right before Christmas and visitors coming for over a week ?! 😩 I remember when my father was still alive, 3 weeks before Christmas, my oven broke down, and my father was coming for a week, I would usually have gotten it fixed, but try getting an oven fixed 3 weeks before Christmas 🤪 I bought a new one, I still remember as a kid ( and grown up) the furnace breaking down on Christmas 😵‍💫 we were always lucky someone had a heart and fixed it 🙏🏻🙏🏻

Our Ford Escape started having electrical issues just before thanks giving. We had to wait until yesterday to get it to the shop.

They are still diagnosing the problem.

For me, it was my organ. The musical instrument, not something in my body. I’m still trying to diagnose this one myself.
