WOW...just viewed a strong sour dough.The thing is, if you proof dough with store bought flour, it takes ages, freshly milled, it jumps up and whenever I mill flour and have some left over, it is „old“ after 2 weeks, the flour you usually buy is 1/2 year old and lasts another 6 months, I really feel it is „dead“ , but I only feel that way since I mill my own flour, before, I didn’t have a problem with it, and my baking was ok too, but once you KNOW , you can’t „unknow“ any more in Germany, if someone is kind of crazy, you say he has one ( or two) screws loose I didn’t find the missing screws, so will have to write the manufacture so send me new ones a friend of mine offered to mill my grains , but I usually bake spontaneously, if I have some extra time , so I find it kind of difficult to plan it …. Maybe I have to, if I want to get any more Christmas baking done

Spent yesterday in Jacksonville taking my hubby to see his pulmonologist.
Then we went shopping for a bed.
I am getting one egg every two days currently.I still can’t bake cos my mill broke down, to get it fixed, I have to ship it to the producer, Christmas madness is going on here last monday, DHL shipped 12 million packages in one day and it will get worse, they hired 17000 extra , but they are not very reliable ( I usually have the same person bring me my packages from DHL unless he is on vacation) so going to the post office it total madness with very long waiting time, did I mention the mill weighs „a ton“ then, the mill requires a transportation securement in form of 2 long screws …I bought it over 20 years ago, don’t ask me, where they are I don’t buy flour, I just have grain…and lastly, I finally got my chickens back, but of course the youngest being 4 years old, they won’t lay an egg before maybe February
