Dutch don't require Dubbing as they aren't a Gamefowl Class.I think they are Dutch bantams.
Some breeds require you to cut them off if you are going to show them and this is called dubbing. The rooster looked like he was dubbed wrong though.

He was Dubbed like the Largefowl Variety.

He looks a little older, like 8-9 months maybe. I would think he stays nice since he reached the "puberty" point! Also, you said he was a show bird so he probably is quite docile. Show birds need to be in order for them to be good for the judge. Most show birds are from breeders and usually (if not 99% of the time) they dont use cocks in cock fights.Thank you everyone!! I see that the breed you guys mentioned is largely used for cock fights and that makes me nervous that he will be more likely to show aggression
