Best rooster for a mixed flock?

I love the brahma breed; we used to have 3 light brahmas but 2 of them passed away so we only have 1 left. The only thing I’m concerned with is breeding. We’d rather not have a bunch of chicks running around, so maybe not a brahma rooster?
Any rooster is gonna breed with hens. Unless you get a really small bantam rooster, but then he wont be a good protector, which sounds like your goal. Why would a brahma make you have chicks running around?

I thought a brahma rooster would make us have brahma babies because we have brahmas and are looking to get more. Somehow I never knew until recently that chickens can cross breed.
 
I like this roo for you, he's my BJG and he is tall dark and handsome. This might discourage other avian predators. What would want to mess with a giant crow, looks can be deceiving because he is gentle and not overly squawky. They should call this breed Black Gentle Giants.

You will never have a bunch of chicks running around, no matter what rooster you have, unless one of your hens goes broody and you allow her to set on eggs for 21 days, or you put eggs in an incubator for the same length if time. That's how long it takes for chicks to develop inside an egg and hatch out. If you don't want chicks, just gather eggs every day and put them in the fridge.

Very true except you only need to put the eggs in the fridge if you don’t eat them within several weeks time. But do not wash the eggs to keep the protecting bloom on the eggs and be more careful to store the eggs for weeks if its getting warm (above 25C) .
