Can ducks have bread if ONLY given sometimes as a treat?

Uhh, well, their stomachs are larger than the size of your thumb.... And I mean this in the nicest way possible; where / how did you come to that conclusion? And is there any other sources backing that statement up?

No, I made it up myself. To keep measure to myself how much crap I feed them and remembering that they do not have a stomach like me; and they are not human. My small thumb looked like a safe way to go. It's tiny, so never too much. If I went for measuring it by a can of coke I might accidentally give too much unhealthy stuff.

As for a lot of bread being harmful to ducks, it got me thinking of the ducks in parks where people go and feed them nothing but bread.
They all seem healthy enough, I know they eat other things too but they do get a lot of bread.

Healthy, healthy. They are often way too fat. That can leed to health problems eventually. Plus the bread can expand in their stomachs and rupture the stomach, or while swallowing it gets stuck and they choke. The latter do not happen often; but you don't wish any duck that kind of dead. And the fatness.. well..
It's forbidden to feed ducks bread in many countries due to reasons.

Bread isn't harmful, but it doesn't contain anything that ducks can really use. If they eat too much bread, they don't have room in their stomach or appetite to eat healthy foods and get their nutrients. A lot of bread will make them fat, and potentially malnourished. A bit of bread now and then is fine. However, there are healthier treats that they'll like just as much. Peas are great duck treats, and I know some give them oats. Just about any of the frozen food in the fish food freezer at your local pet store would also be a good treat, though you should definitely thaw it out first.

'Duckbread is duckdeath' it says. I'm not German but they are all over Europe and I particulary liked this German graphic design. They are not there for nothing.

If you have the choice; bread or something else. I would go for the something else.
If the bread is the only thing you can offer them as food and they otherwise would die because no food; different story. But if you have the luxury I would go safe and just give something else.
