Cat keeps eating eggs out of nest

Cats and poultry (all birds) should keep a respectful distance from each other, as cat saliva has bacteria that is often deadly to birds when ingested (from feather preening) or when in a wound.

That does not mean you should lose all sensibility and kill the cat, but rather build either a pen for the ducks or a pen for the cat.

It is about responsible management of your animals. I have both cats & chickens happily co~habitating. [The neighbours have ducks] The cats have never been allowed in the chicken coop & avoid it even during free ranging time when the door is left open. They keep a respectful distance from my chickens ~ a full grown hen or duck is a match for most cats. Not sure about some of your monster Main Coons. I am home most days & collect the eggs as soon as they're laid, which reduces temptation. Bear in mind each animal's part in your eco system. My cats help control the rats, mice, snakes & huge lizards we get around here & deter the wild birds from the chicken enclosure. The chickens provide eggs & fertilizer. If you own the animal you are responsible for it. Don't mean to sound horrible but here cats are the most vilified animal & people do horrible & upsetting things & it is so unnecessary. There are ways to manage the problem .

Sounds like the ducks roam free but go into their house to nest....?
Is your cat typically an outdoor cat?
Do you have plans to build a duck enclosure?
Options are available to you, they just depend on what you're willing to or can do.
