I had never even heard of a Catahoula until my sister got a Cat/mix.Shelby is 6 months old and the best dog I have ever had!!

Just a few questions for those of you more familiar with Catahoulas.
We adopted our Rosie 2 years ago this week. She was only 2 months old and the pound didn't know what she was. We looked up a number of different breeds trying to take a guess when we met a lady who raised Catahoulas. She said Rosie looked and acted like one. So we started looking into the breed and she really seams to fit. There are 2 things I have noticed with her that I have never really seen in dogs before and I was wondering if that was a Catahoula trait or just a Rosie trait. So, here they are: Rosie doesn't bark really. I think I have heard her bark 3 times. When she is alerted to something she sounds more like she is huffing with a little more volume. It's kinda funny, like her bark is broken.
The other thing is she always has her mouth closed. Most dogs I have met show alot of expression through their face especially the happy doggy relaxed, open-mouthed, tongue hanging out kind of look. We read her emotions through her ears and tail.
Im just curious if those are Catahoula things, normal dog things, or just Rosie things.
I have had a few dogs and I have even been lucky enough to have jobs in the past that paid me to spend time with dogs and I have never really seen these 2 things before.
 
I have a question to the Catahoula owners.. We have a 7 month old Catahoula puppy from a rescue and she is crazy funny. She seems to have imprinted on my wife as she freaks out when she leaves the room. She follows her EVERYWHERE. Although she likes me and hangs out, she definitely follows my wife around. When my wife starts to get ready for the morning, the Catahoula hinds under the bed as she knows she might have to go in a crate. She won't go outside unless my wife comes with me. If I try and call her or catch her, she runs under the table or under the bed.

Is this normal behavior or possibly something from prior to us owning her? We got her at 2 months, so I didn't really think things could have happened to her at that age.
