Not all birds quit laying during molt but good majority will.On top of that no bird lays everyday,escpecially as they age egg laying can slow down tremendously.
Personally it’s not always a breed thing, it could be an individual thing as well as a hereditary thing when it comes to personality and temperament .Some breeds are just known to be hereditarily more aggressive, such as games,and often times Rhode Island reds.The barred rocks that I have kept have always been human friendly and just your typical flock bird, never too aggressive nor too soft, never victim of bullying.Easter Eggers tend to be flighty but I have had a friendly Easter egger.Buffs are also a very sweet bird however my two were a bit bossy and defiantly didn’t match the birds reputation,they would even try to dominate me.Austrolourps are also just regular, never here too much about having issues with them, their not soft but their also not aggressive.
Definitely expect the unexpected, chickens can be quite unpredictable.
