Hi!
Our ladies have started laying & see lots of different info on unwashed counter & fridge lengths! What do you go by? we won’t have the volume to jar preserve & plan to give away half cartons when we hit peak laying.

A few from this week for ref—I think today’s egg is from a new lady laying as color is different! So far this week 5 from our cinnamin queen & think today’s is from our wheaten maran?

Thanks!

I store my eggs on the counter. They stay 2 weeks. If you want longer, I would recommend the fridge because that lasts 4 weeks! I also wouldn't wash until use, due to the protective coating.
Thank you! I know not to wash the bloom but I havent been washing before I crack and cook? is that ok? also, after a week on counter can I put in fridge if unused?

Yep! You don’t have to wash them, I just do it : ). Definitely not needed! You can put them in the fridge unused after a week! They should last 1-2 weeks after that. You can see if they are good before you use them by seeing if they sink in water. If they float they are bad. (I’m not sure if this is scientific but it has always seamed to work for me!)

I put them in the fridge. Counter space is very valuable to me and the only reason why I don't keep my fresh eggs on the it. Fresh eggs can keep for a very long time at room temperature as long as you don't wash them. Even longer if kept in the fridge. I don't worry about washing the eggs unless they get a little soiled (happens once in a while). Overall you should be fine using your unwashed eggs, I do and we're still alive and healthy.

During peak i do put some in the fridge just so they last longer thats also when i do baking and freeze some of the baked food since i dont have a ton of room for water glassing.
otherwise they are on the counter and are used within a week of laying so i have rarely had eggs go bad.

We eat the freshest eggs, use older eggs to bake with. I did water glass a couple of jars for the long dark days of winter. My DHbteases me if we have to buy eggs. Do know you don’t have to do a full jar all at once. You can start a jar and add to it, but only add fresh eggs.

If I plan to set eggs, I date them and keep on the counter, otherwise I fridge mine.

and last newbie silly q: I’m guessing if I just soft boiled one & didnt wash it thats ok too? I hadnt thought about boiling before just cracking to cook.
