Duck Egg Yolk SO Thick!

Is it usual for duck egg yolks to be so thick? Today I decided to feed some to the chickens and it was almost like jello...... I don't know if I had the fridge too cold, maybe I should just leave them out at room temp. Just wondering.....
 
Duck egg's are more dense than chicken egg's.Some people like them for eating while other's don't.I personaly have never eaten one although have raised Hundred's of duckling's and the egg's from them.I had a couple of customers for egg's just for cakes so...Maybe someone else can chime in .
 
Oh yeah, nice and thick egg whites that stick to the shell when you crack it open and try to dump it into the pan. Kinda a thick ooze that won't release from the shell without assistance. Excellent for all baking needs and pretty good deviled too.
 
Gram for gram, duck eggs have less water than chicken eggs. I eat them, and enjoy them, all kinds of ways, and bake with them. It takes extra time to mix the yolk and white together before I add them to the cornbread batter. I tell people about this when I give them the eggs.

yes I will NOT eat my duck eggs plain but boy I love to bake with them!!! yummy-my bannana breads I made yesterday were awesome!!!
 
We use them for three egg omlets for that reason. Two chicken eggs to one duck egg. Oh and they make the best chocolate chip cookies. The Best!
