EE & BCM blue egg?

We have an Easter Egger who lays a light blue egg and a Black Copper Maran cockerel. My understanding is that their offspring should lay either brown or olive colored eggs? Is it possible for any of their offspring to lay blue eggs - or offspring further down the line? (I really like the blue eggs and so I'm hoping to eventually breed more chickens that lay the blue egg).

Yes. Something like an Ameracauna or a Legbar, any breed that purely lays blue. That is your starting line. An EE is already a mix, so the colors that went into her eggs could throw off your intended colors.

If you want to get blue eggs down the line, the bottom row is your best guide on the chart.
 
It's the brown egg influence that will cause the problems. Marans have heavy brown egg genes, which will stick around and cause green eggs for 2 generations at minimum. Probably more.

It's expensive to try to breed for something instead of purchasing it already made. Because of the cost, breeding projects should only be undertaken when something specific does not already exist.
Ameraucana and Legbars, some EE's, and more, are good options for nice blue eggs.
 
Thank you GlicksChicks & SourRoses for clearing that up for me! I'll be looking out for some Ameraucana and/or Legbar hatching eggs in the future.
