Egg shells too thick?

Yeah, my girls eggs are thicker than supermarket eggs, instead of the little tap on the edge of the frying pan that I used to do, I get a little bit harder with it, it's no longer a tap any more

Yes, I love the big thick beautiful shells!

I was in a supermarket yesterday and couldn't resist opening up a pack of the cheap white eggs. They looked awful! The shells were so thin they were almost transparent.

A sharp, direct crack on the raised rim that goes around the sink does the trick, even though mine are so thick right now that I'm having trouble with calcium deposits (time to dial back the oyster shell a bit). I *never* crack on the edge of a bowl, especially one that has something important in it already, that's a great way to get skunked by a bad one, or end up pushing shell bits inside the egg.

But yeah, just don't be afraid to give it a good whack. I find that the shells actually break much more nicely for me, right down the middle, rather than shattering. This makes separating yolks and whites very easy.

Also beside the little bit heafter whack I then turn mine over with the
whacked side up and open it with that side up. Then turn it over and
put in the skillet or a bowl.

I watched my granddaughters cracking some of our eggs and having a
rough time. Seem so much easier to me when I flip them over and
open the egg with the cracked part up.

Mine are tougher too, I thought it was just me. Same thing with the membrane not wanting to break and crumbling little bits of shell everywhere. Like the others, I found I had to be a lot firmer with my "whack" on the edge of the counter. Glad to know it's a good thing tho!!!
