Granny's gone and done it again

I've always been told that lard is pork fat and tallow is beef fat. I only make belly fat myself.
yes, thats what I just read. But, lard and bacon grease are different. The bacon is smoky flavored.

True. Bacon grease only can be made from bacon when you do it yourself. I've never seen that sold in stores and I think the reason why is it can go rancid if not used soon enough. You can make bacon grease in a microwave if you have the tray made to do it with. We bought 4 lbs of thick sliced bacon Friday while it was on a half price sale. It made an exceptional BLT for lunch today. If I do feed out a pig I will get a loin made into smoked chops too and trip the fat and render it and that will be like bacon drippings too.
 
Looks like we will have stuffed jalapenos on the grill tomorrow with the country style ribs. I also picked the first of the cayenne today so we can make our cayenne skillet corn that is made with smokey bacon drippings and some butter blended in.
 
Besides the stuffed jalapenos on the grill with country ribs there will be some eggplant slabs from eggplant just picked. I think tomorrow's yard party will qualify as a feast.
