I've always been told that lard is pork fat and tallow is beef fat. I only make belly fat myself.

yes, thats what I just read. But, lard and bacon grease are different. The bacon is smoky flavored.I've always been told that lard is pork fat and tallow is beef fat. I only make belly fat myself.
True. Bacon grease only can be made from bacon when you do it yourself. I've never seen that sold in stores and I think the reason why is it can go rancid if not used soon enough. You can make bacon grease in a microwave if you have the tray made to do it with. We bought 4 lbs of thick sliced bacon Friday while it was on a half price sale. It made an exceptional BLT for lunch today. If I do feed out a pig I will get a loin made into smoked chops too and trip the fat and render it and that will be like bacon drippings too.yes, thats what I just read. Besides the stuffed jalapenos on the grill with country ribs there will be some eggplant slabs from eggplant just picked. I think tomorrow's yard party will qualify as a feast.
