Beef Stew with yellow rice and fresh baked Cuban bread. Finished with homemade chocolate cake with chocolate ganache and chocolate frosting for my dad's birthday.

I usually do not use a recipe but tried to figure one out for you... try this one..


chop real fine the following:
3/4 cup of sweet onion
1 rib or so of celery
1 carrot
1/2 of a sweet red pepper or use green (I like the red)
2 cloves of garlic
(I have put it all in a chopper but sometimes it is too mushy)
saute all in 2 tbls of oil or butter until soft
add:
1 1/2 tsp of salt
1 1/2 tsp of pepper
2 tsp of worschester sauce
1/3 cup of ketchup
cook for an additional minute take off stove to cool a bit

when cool a bit add veggies, 2 eggs beaten, 1 cup of breadcrumbs and 1/4 cup of parsley to:

1 1/2 lbs of ground chuck
3/4 lbs of Italian sausage removed from casings.
mix all together well and form a loaf spread with tomatoe topping <place in a retangular pan with 2 inch sides.. do not cover

tomatoe topping:
1/2 cup of ketchup, dash of worchester sauce, dash of hot sauce,2 tsp of brown sugar and a small squirt of mustard
heat to blend ingredients... spread on top of loaf.

350degrees for 1 hour or so...

Iwanted to say also that this is the basic meat mixture I put into my stuffed cabbage... sometimes a bit more sausage.. but I half way cook everything.. veggies meat rice and cabbage tI do add a bit of parmesan cheese and then assemble all the cabbages put in a dish and cover with basic tomatoe sauce and cook for a few hours... great heated up.
