You said you got an "egger mix"

I assume you mean "assorted colored egg layer" ? That's what's on their website. And it lists the potential breeds in the description.

While it's true they don't sell Ameraucana, they do sell easter eggers and "americana" (which is an easter egger)

Either way, Ameraucana are commonly used to create various eggers. That's why they commonly had beard and muffs.

Araucana and Ameraucana have been used to develop other breeds that can carry the blue egg gene, but they bred out the characteristics that would look like Araucana and Ameraucana. Some of those new breeds are being used to make eggers.
 
I ordered 20 chicks from Hoovers Hatchery this spring. I dint plan on keeping all and am going to split the order with a trusted friend. These chicks are now fully feathered and now 10 and a half weeks old. I ordered the five of the egger mix, five of the Wyandotte mix, five black Astralrops and five sapphire gems. (The first two are the ones am not sure are roos or not; the last two just a girl for reference)

I know I have two Colombian Wyandotte, and three golden laced Wyandotte. (I added a photo just to be 100 % sure I am right.)

I am pretty sure which ae the five sapphire gems. They are also different shades. Two of the gems didn't get their tails, which are still shorter until later. They have some signs of being roosters. Are they?
I know which five are the black astralorps, as i don have any othr black breeds. However one has a different comb and muffs, like amercuanas have. However Hoovers Hatchery doesn't even sell Amercuanas. There is no way that on is a egger because there is n others that could be the fifth black astralorp. Will hoovers Hatchery throw in random filler chicks? They looked the same as chicks and are still pretty similar... (The first photo has the muffed one in the bac and a black astralorp in the front. The second two photos are just the black one with muffs.)

I have a good idea who the five eggers are, but not sure what mix of breeds/ what egg color they will lay. I have three of the red ones (The first two photos) and haven't seen any online pictures of similar eggers. I have two of these light brown ones (the last three photos), which are really pretty! I also haven't found any pictures that really resemble them. Is there a chance they won't lay colorful eggs?

Those first two look just like my two blue Jersey Giants!
 
The first 2 are sapphire gems. A male of that sex linked mix would be barred. That means they are pullets.
I agree with this. You should have five of the blue ones. You're right about the Wyandotte. Columbian and Gold Laced.
I'd suspect you have 4 Austalorps and the other black one some kind of Egger.
I can't say why they threw that one in instead of what you wanted. The 5 brown ones are your eggers and no guarantees on what color eggs they'll lay. I'd guess the first pics are probably Starlight Green Eggers. Those will probably lay green eggs. The other other two look like run of the mill EEs and may lay brown.

The bird is an "Easter Egger".
Hoovers has multiple names, so that makes things more confusing, but you're correct that they don't sell Ameraucana.

(Below might make it more confusing. Feel free to skip.)

Hoovers markets both "Americana" and "Easter Egger". In reality, BOTH are Easter Eggers, as neither of them are the Ameraucana breed.

Some of them might have an ancestor who was an Ameraucana. With easter eggers, when you see beard and muffs, it's often associated with ameraucana.
