If the whites of boiled eggs are sticking to the shells and are difficult to peel is that a sign of lack of calcium?

X2. If you steam them you'll have better luck. I use this type of egg steamer. You prick a hole in the ends of the eggs which may be part of the success of non sticking shells.

Fresh, really really fresh eggs stick to the shell when boiled and are hard to peel. I personally steam my fresh eggs (12 minutes, I like them hard boiled) and immediately dump them into ice cold water as soon as they're done cooking and start the peeling process immediately. The cold water causes the egg inside to contract, pulling it away from the shell.
 
I bring my 2-week old eggs out of the fridge at least an hour before I plan to cook them so they'll be at room temp. Then I bring the water to a boil before putting the eggs in. Bring the water back to a boil, turn the heat off, cover and let set 11 or 12 minutes. Dump out the water and fill the pan with ice water to stop the cooking. They should peel easily whether you peel immediately or refrigerate to peel as needed. And they won't have a tough, green rind on the outside of the yolk!
