I was planning to fire up my Traeger today, but when I opened it up, well, nope. High humidity over the winter caused mold, and it will require a major cleanup to the grates. I should've cleaned it better last time I used it.

So I'm going to cheat and roast a pork butt in the oven today. It's cold and wet outside, so I could use a little heat in the house.

It's salted and covered with dry rub, and in an hour or so I'll put it in the oven. I've started using high temperature smoking in my Traeger for pork butts. Low temp for smoke for the first couple hours then kick it up to 350 degrees to finish. It works well that way.
