I have a couple hens that, when I approach them, squat down, spread their wings slightly, and almost do a little dance with them stomping their feet. One of them is newly laying and the other just came of age. Is it fear or defensiveness?

It is a sign that they are laying or very close to laying. When you have a rooster, they won't do it for people, but if you don't, it is very common for them to do it for the care giver. If you reach down and pet them, they will stand up and shake, just like they have been bred.
