A definate fav here,
1 lb of egg noodles cooked aldente', chilled in the refridg.

1 lb of chuck roast( stew beef)
1 large onion
garlic ( fresh cloves, as much as you like)
salt ,
pepper
half bag of baby carrots
1 box of Emerile Laggasi Beef stock
baby red potatoes


chunck up the roast , orcut stew beef to size
hot braise to brown meat
put into crock pot, add onion garlic, salt and pepper, stir to mix up flavors.
next add the baby carrots, potatoes, and beef broth.
cover and set on low.

at dinner time
take chilled noodles
2 tsp olive oil, ( or flavored oil of choice)
place in a wok or fry pan, toss lightly on high heat till noodles are just past aldente'
place in a bowl ladel soup mixture over the top, add fresh Parmisian cheeze, croutons, or topping of choice.

Here's another bbq sauce variation that is very easy and tasty. I use it over pork chops, chicken breasts, beef or pork roast or even as a sloppy joe sauce. It's one jar of salse (whatever hotness you prefer) and a bit of mustard and brown sugar to taste. Quick, easy and oh so good over rice.

Another good sauce is coke gravy. Mix 1 can of cream of mushroom soup and 1/2 can of cola, pour over meat and cook. I usually use beef or venison roast, but I am sure it would taste good over pork or chicken also. It makes a tasty, sweet gravy and it great over mashed potatoes or noodles.
 
Crockpot Chicken Divan

Chicken breasts in a creamy sauce with broccoli.

1 package frozen broccoli spears
2 to 3 chicken breast, boneless, skinless
1 can cream of chicken soup
1 c shredded swiss cheese
1 Tbsp dijon mustard
1-1/4 cup mayonnaise
1 teaspoon lemon juice
swiss cheese for topping
Place broccoli in the bottom of slow cooker. Put chicken on top of broccoli.
Mix together remaining ingredients Pour over chicken. Cover and cook on
low for 8 hours. top with remiening cheese in last 15 minutes


Crock-Pot Chicken Enchiladas
1 lg can enchilada sauce
4 chicken breasts
2 cans cream of chicken soup
1 sm can sliced black olives
2 dz flour tortillas
1 chopped onion
1 pkg sharp Cheddar cheese, grated

Directions:

Cook chicken and shred. Mix soup, olives, and onions. Cut tortillas in wedges.
Layer slow cooker with sauce, tortillas, soup mix, chicken and cheese all
the way to the top, ending with cheese on top.

Cook on low temperature about 8-10 hours.
 
I haven't had this before, but saw the recipe and thought it sounded really good.

Brown Sugar Chicken

6 boneless, skinless breast halves
1 cup brown sugar (it's okay. you can brush your teeth after.)
1/4 cup lemon-lime soda (stay with me...)
2/3 cup vinegar (I used white wine, but think regular white would be fine)
3 cloves smashed and chopped garlic
2 T soy sauce (La Choy and Tamari wheat free are GF)
1 tsp ground black pepper

The Directions.

Use a 5-6 quart crock pot for this recipe.

Plop the chicken into your crock pot. Cover with the brown sugar, pepper, chopped garlic, and soy sauce. Add the vinegar, and pour in the soda. It will bubble!

Cover and cook on low for 6-9 hours, or on high for 4-5. The chicken is done when it is cooked through and has reached desired consistency. The longer you cook it, the more tender it will be.

Serve over a bowl of white rice with a ladle full of the broth
 
Spicy Sausage & Bean Soup

4 large sweet sausages
4 large hot sausages
3 carrots
2 celery stalks
1 small onion
1 can crushed tomatoes
2 sm cans of cannellini beans
1 1/2 cups chicken broth
2 bay leaves
2 tsp basil leaves - I used fresh
1 cup red wine

Remove sausage from casing and break into smallest pieces to cook in a frying pan. Drain. In crock pot lightly saute chopped celery, carrots and onion. Add broth, chopped tomatoes, beans, seasonings, sausage and wine. Cook on med 4/5 hours til done. Serve with crusty artisan bread.

*the red wine really makes it! Paul & I ate this stuff every night til it was gone! Great for those chilly spring nights.
