Possum Pie Recipe

Millionaire Pie
1 vanilla wafer or graham cracker crust
1 (8oz) pkg. cream cheese
1 1/2 cup powdered sugar
1 c chopped pecans
1 small can crushed pineapple, drained
1 pkg Dream Whip
1 tsp. vanilla

Soften cream cheese to room temperature. Add powdered sugar anc cream well with mixture. Stir in pineapple and nuts thoroughly. Prepare Dream whip according to pkg directions and fold into mixture. Add vanilla and pour into crust. Chill 3 hours before serving.
 
these cookies are made in egypt at holidays. I know it's a strange recipe, but they are absolutely delicious.

Ingredients

* 2 cups unsalted butter (samn balady)
* 1 cup whole milk
* 4 1/2 cups all-purpose flour
* 2 tablespoons baking powder
* 1 teaspoon instant yeast
* 1 teaspoon ground cinnamon
* 1 teaspoon ground cloves
* 1 teaspoon ground ginger
* powdered sugar

Directions

1. Heat the samn balady until almost boiling.
2. In seperate bowl, add the baking powder and the spices to the flour.
3. Slowly add the flour mixture to the hot samn balady and stir thoroughly.
4. When the mixture cools (warm to touch), add the instant yeast to the milk with a teaspoon of sugar, then stir gently into the dough.
5. Knead it for a short while, cover and let it rest for an hour.
6. Shape dough into balls, then flatten them.
7. Inserts nuts, honey, sugar, agwa (date spread), or other filling when you are making it into balls.
8. Put them on a cookie tray and let them rest.
9. Bake in preheated oven (345 F) until golden.
10. Cool and sprinkle with powdered sugar just before eating.

I must warn you that this isn't our family's recipe, so I've never tried it, but my grandma is the one who has the recipe, and she's in canada to have surgery for cataracts (prayers would be appreciated, cuz the first operation went wrong). but I would add sesame seeds and anise and fennel seeds, and perhaps take out the ginger. the rest looks about right. and you can leave it to rise a bit longer than the recipe says.

1 cup white sugar
1 cup brown sugar (pressed down)
1 cup Crisco
1 cup peanut butter
2 eggs, beaten
3 cups flour, sifted with a pinch of salt and 2 tsp. soda

I use reeses pieces and press lightly into the cookie before baking.

Preheat oven to 350* Mix in order given. Shape into balls and press. (I use a fork). Bake in 350* oven till light brown on edges.

One of my most requested cakes:

Chocolate Thunder Cake

1 german choc. cake mix (any choc. flavor works)
1 14 oz can eagle brand milk
1 8oz jar hot fudge topping
1 8oz tub of cool whip
1 pkg butterfinger candy bits, crumbled (you can use Heath bars too)

Bake cake according to directions. Let cool 30 minutes. Poke holes in cake with wooden spoon handle (about 3 - 6 mm)
Pour eagle brand milk over cake and spread. Let sit 5 minutes. Spread hot fudge topping over cake. Let sit 5 more minutes frost with cool whip, Sprinkle butterfinger bits over top. Chill until ready to serve...

I made scones today!!!!!!!!!!!!!!!!!!!

it was a simple recipe with variations

2 cups all purpose flour
2 table spoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter or margarine, cut up
2/3 cup buttermilk
1 large egg

preheat oven to 425*F. Grease cookie sheet. combine flour, sugar, baking powder, baking soda and salt in large bowl.

with pastry blender or 2 knives, cut in butter until mixture resembles coarse crumbs. beat buttermilk and egg in small bowl.

pour onto dry ingredients and stir with fork until mixture comes together

transfer to prepared cookie sheet. with floured hands, pat into an 8 inch circle.

score into 8 wedges with long knife. do not cut all the way through. bake 14 to 16 minutes or until the center is no longer gooey and wet looking.

If you are adding a cup of fruit, chocolate chips, or something of the sort, add a tablespoon of flour and 2 tablespoons of sugar.
fresh or dried fruit works better than frozen, frozen makes it too sticky.


I made a plain one, a chocolate chip one, a strawberry one, a blueberry one, one with craisins, chocolate chips, and orange zest w/ a little bit of orange juice in stead of some of the buttermilk, and one with craisins and walnuts. 6 in all
