I have a metal shed that I'm trying to convert to a coop. The biggest issue I have is fixing/replacing the leaky roof. This is my shed . . it won't be on the foundation once I get it where I want it

I thought about ditching the old metal roof and replacing it with wood, but I'm not sure the shed would support the weight?

I'm also open to suggestions on repairing/patching the leaks. A friend suggested using spray foam insulation, but I'm worried if it comes loose the chickens will eat it and get sick . . . . also it's insulation . . .I'm not sure it would prevent leaks indefinitely.

I just looked those up . . . and they could be used to replace the existing metal roof and the weight wouldn't be an issue . . . .Thanks
I am of the "keep it simple" school.

if you remove the existing roof you are left with 4 flimsy walls flapping in the breeze. My first approach would be to attach the new sheets to the existing roof rather than replace.

Would you consider the plastic ones as flexible? The biggest leak(s) seems to be at the ridge of the roof . . . if I could bend one over that it may stop the majority of the leaks, then I could use flex seal/tape on the smaller ones.

They make ridge caps for plastic and metal roofing.

One can buy aluminum from 6" to much wider, in rolls. Very flexible. Not expensive. Get a board, lay it along the middle length so you can bend it to fit the roof. Use either glue or caulking to attach along the peak. Any good hardware store.
