Sapphire Gem & Lavender gender?

I have two Sapphire Gems, pic # (1 & 2) and one Lavender Orpington, pic # (3) all approx. eight weeks old. Could anyone give me their best guess if they are hens or roos? Also, which gems color is more desirable, the light or dark? Thank you in advance!

All pullets! Sapphire Gems are a first generation cross mostly used for egg-laying ability and their ability to be sexlinked so have no standard.
