Shadrach's Ex Battery and Rescued chickens thread.

For inpiration:
I made a vegan soup yesterday that tasted really great. With very nice bread and fresh butter its a great meal if you serve a tasty salad as a starter and a desert after the soup.

Ingredients
400 grams parsnips (diced)
200 grams cauliflowers (in florets)
3 tablespoons olive oil
2 tablespoons thyme
1 can chickpeas (rinsed, drained)
1 teaspoon paprika powder
1 teaspoon coriander powder (ketoembar)
1 teaspoon cumin powder (djinten)
1 teaspoon dried oregano
1 liter vegetable stock

Roast and boil most ingredients and use a hand blender ro make the soup.
Roast the chickpeas with some herbs for a topping.
Soups would be considered cheating. I need three courses. Thanks all the same.:)

Oh arr. I've got one of those. Just need a sharp knife to chop the hard stuff finely.

Never be too old to break the rules Shad. Do things the way you like it.

Start with Icecream or a simple pudding if you like.
Bread with French cheese as second dish.
Serve the soup as main course.
A fruit cocktail in between.
Avocado with a mustard-mayonnaise to fill up.
And coffee with petit fours or chocolates as desert. 🤡

A great meal to remember … 😹

I completely forgot after you criticised the delicious soup.
For main dish I have another suggestion. Its very similar to a traybake I made before but searching for the recipe I found this:
Vegan tray bake with chickpeas.
A well-seasoned tray bake that you can quickly put in the oven with little preparation where the flavors can really come together.

Ingredients

600 g sweet potatoes

2 cans chickpeas (400 g)

2 red onions

2 eggplants

4 tablespoons olive oil

2 tablespoons paprika powder

2 tablespoons cumin

2 teaspoons garlic powder

4 handfuls fresh parsley

1 lemon

Preparation

Rinse the chickpeas.

Peel the sweet potato and cut into rather large pieces. Do the same with the onion and eggplant.

Place baking paper on an oven dish and put the chickpeas, sweet potato, eggplant and red onion on it. Divide the olive oil, paprika powder, cumin and garlic powder over it.

Put the traybake in the oven for 25 minutes at 180° degrees.

Serve with fresh parsley, some extra olive oil and lemon juice.

My previous traybake had no aubergine and cumin but carrots, pumpkin and lots of fresh thyme.
