Even if it was a good idea to just go right at 1000 immediately, scovies have finished laying for their season in most areas months ago. The last egg I saw from any of my ducks was back in October I think
 
I could be wrong, but I think most hatcheries renew their laying stock every year. So long as I have muscovies under a year old, I get eggs all winter long. It's not until after that first year that they quit laying in the fall.

All this is making me wish I could set up a restaurant in Florida and sell menu items made from the tastier invasive species trapped there, like muscovy and python. I've seen some fancy restaurants that get their goods exclusively from local foragers and hunters, so same concept.
