What did you do in the garden today?

I doubt that a water bath canner would be safe for meat. We only use a pressure canner for chicken. Have no ducks or other poultry. We vacuum seal and freeze most of our chicken. I think Ma has already canned some chicken with her counter top electric pressure canner. I'll ask her once she is up and going come morning.



only pressure canner is safe for meat. but does it melt bones so that they become edible? I'll have a lot of indian runner drakes and they have little meat.
 
No, you must pressure can meat. I can two chicken thighs at a time in pint jars and the bones come out soft enough I’m not worried about the dogs eating them.



my dogs catch martens, minks, etc. and eat them. no bone is hard for them. I am more interested in people eating canned ducks with bones. that's what the girl said. they melt so you don't understand it's a bone.
 
Good morning gardeners. Still no rain. Looks like a new hurricane forming in the Gulf of Mexico. I hope we get some rain from this one. I dried the tarragon late afternoon yesterday. I think I’ll do mint today. I’ll be watering the collards, strawberries and herbs this morning. Apple picking isn’t happening until the week after next so I will have time to do more canning. Either another batch of peach preserves or tomato sauce. I too am a sage lover @Sally PB. If I were making a 4 to 5 quart pot of winter squash soup I would add about a teaspoon full. Sage goes well with a variety of proteins. It’s very good with white fish, pork and poultry. It’s also quite tasty with roasted root vegetables. And like @Sueby mentioned, fried sage leaves are never bad.

Didn’t say the bones were too hard for them. In fact they’re soft and splinter easily so if they’re soft from pressure cooking they don’t get stuck in the dogs throat. Our dogs put deep grooves in thick marrow bones so I know how strong they are.
 
I think my environment in the tropics is upside down, like how the steering wheel of an automobile in Asia is located on the right side of the vehicle or like how they read and write from right to left.

I kind of hibernate from the garden during the hot summer months and start preparing and planting during the winter months and harvest during spring.
