Can we specifically talk Knives?

I just did a bird Saturday morning complete with my havalon.....

I truly love these knives, they are so sharp they make everything easy.

I used to work in a butcher shop during college and we used victorinox boning knives and that is what I use to butcher my chickens now. They are relatively inexpensive, hold an edge, sharpen easily, and will last for a long time. My grandfather had a victorinox filet knife he used for fish and he sharpened it down to a literal stub and it was still a good knife. I have 2 and they keep an edge long enough to do several chickens start to finish before swapping.

I even use them for head removal and a with a deft hand can remove the head in one stroke
