Boiled eggs sticking to shell????

This is the second time that I boiled some of our fresh eggs. The first time, I didn't plunge them into cold water immedietly & thought that was the problem. This time I immedietly plunged them, and they still stuck to the inside of the shell! Like most of the whites! I have noticed that when i crack one to scramble, the membrane is very thick, and sometimes I have to crack them several times to get thru it, and the raw 'whites' are very thick, but I figured this was just all because they're free range & because we have a roo and they're fertile. Is there no hope for boiled eggs??? My 8 yr old's specialty is 'deviled eggs' she'll be so sad. Any ideas????
 
It's much easier to peel an aged egg than a fresh one -- stick some in the back of the fridge for a week and then try.
 
I steam my eggs instead of boiling now. After reading several posts on here and trying every method suggested, I will never boil an egg again. I start the eggs in the steamer basket before the water is boiling....and steam for the same amount of time I would boil them, no need for vinegar, salt, baking soda. or any other silly thing that doesnt work every time..peel like a dream even if they are fresh!

I agree. Fresh eggs are harder to peel.

But I did learn a trick that I stick by - in addition to the salt in the water.

As soon as they are done boiling, get the coldest running water over them and throw some ice cubes in for good measure. Keep the cold water running on them for a good 30 or more seconds. The extreme hot to extreme cold seemed to really do the trick.

I had been kinda wishy-washy about the hot-to-cold and the eggs did not peel well. It has to be really cold water for awhile to cool them down fast.
 
Fresh eggs are truly hard to peel.... But who would trade them for stale ones??? I never heard of steaming them, but I am intrigued.... Any tips to offer??

AND ... I never drop fresh eggs into boiling water... Let them come to temp with the water, and boil for 5 minutes more than you would normally... They will peel..... Usually....

Yep yep, fresh eggs are almost impossible to peel without the proper treatment. Personally, whenever I want to make deviled eggs, I just lie them all on their sides in a carton (to center the yolks), and stick them in the back of the fridge for a week. Viola, no extra work!
 
I've found that they need to be at least 3 days old AND the water you put them into needs to be colder than the egg before you start cooking them.

I am going to have to try the steaming thing though =o)
