Got eggs & Zucchini - these patties are the best!

I make the zucchini crust, then after it is baked, I cut it into "bread stick" sized pieces and dip it in garlic butter.

I really don't use a recipe - I had one but don't know where it is -


1/2 C Mayo (I only use Kraft mayo)
1/4 C Sour Cream
1/4 C Heinz Chilli Sauce
1 TSP Cayenne pepper

You can make this to your own taste too. I love this sauce and we use it instead of Ketchup too. It is great on EVERYTHING!

I tried the zucchini patties....oh my how yummy. When fresh out of the fryer, I sprinkled with more parmesan cheese and some sour cream. They are wonderful. And how much cheaper can you eat?

Now I know for sure Ill be planting zucchs this fall...mmm mmm mmm.

Well the Zucchinis are coming on strong - so way too many to make the patties all at once. So I shredded the zucchini into 1 cup measurements and frozen them. When frozen I re-wrapped in waxed paper in put in Zip Lock bags. But as I mentioned before the patties freeze real well - problem is you just to have time to make them. Glad to hear that you like this recipe - it is a really good one.

I have cooked these things 3 times now - MMMmm We love them so much I even took a picture of them yesterday

They are awesome with any dish or just by themselves - so gooood.



Yours are wayyy fatter than mine LOL I do mine up like hushpuppies to dip in the sauce - ohh I can eat these all day long =-)
