Got eggs & Zucchini - these patties are the best!

You all are making me sooooo hungry! I really need to make some of these... I just got done slicing, dicing, shredding, blanching, freezing 8 gallon size bags............ there will be more zucchini/squash tomorrow!

I didn't have any mozerella so I substituted with half a package of cream cheese. We put cream cheese in everything LOL

I just stuffed myself again tonight with these yummy zuch patties. 2 zuchinis make 8 patties...fried extra crispy, thank you....sliced tomatoes from the garden with Dukes mayo, salt and pepper...

aaaahhhh, life is sooooo goooood. And cheap!

Glad that everyone is enjoying this recipe. Our Zucchini plants are getting destroyed by aphids and going fast. Hanging on to see if we can get a few more zuccchini. Still need to make more patties and only 8 mini loaves of bread in the freezer so far. I'm going to try the cream cheese. There was another person who did that and deep fried like a fritter. YUMMY!

Posted another thread about having too much basil. If any of you have ideas for using up a ton of basil please let me know. Already have enough pesto in the freezer for the next three years.

Anyone ever make a pesto type paste that could be added to pasta sauces or used on pizza. Throw your ideas my way if you have any.

I made the patties tonight with golden zucchini. YUM!

So when you freeze this, do you form them into patties, like with a Tupperware burger press or just make up the batter and freeze? or cook and freeze?

You completely cook them. Cool and put a piece a wax paper between, stack and freeze. I usually get about 6/7 patties per quart freezer zip lock type bag. Put a knife between frozen patties and they come apart pretty easy if you want one or two at a time.

I make mine with golden zucchini all the time and also a straight neck squash. I like things really uniform so I actually use on English Muffin rings (I make my own English Muffins too) to shape the patties and keep all the same size! I know I'm a bit weird.

It's Friday and I want to go home and cook!! Going to my mother's this weekend so I'm really bummed about not being home to cook, but glad to see my mother.

Will someone write me a note so I can go home sick
