Can you just leave water and wet, mushy food in her cage, available to her and let her eat and drink when she's ready?

Yes of course, that's how I've got it set up l at the moment, I was just worried she'd get dehydrated or something and make recovery more difficult in the first day or two

Can you place her in a small bathroom or closet with tile or vinyl floor, and put paper towel down or puppy pads so she could walk around and might feel more comfortable until you get the larger crate? Maybe if she could see another mild mannered chicken, it might make her more interested in food and relax some. Those are just some suggestions. Crop feeding is easy to learn. You can also try giving her torpedo feedings, which is just some chicken feed plus raw egg and water, made into small bite size torpedos to be hand fed. Here is some reading and a video:
