Sounds and looks like you're possibly having predator attacks..

More information would be needed to try and determine which predator it might be.. like where are you finding them (inside the coop or out in the yard, etc), at what time in the day, where are you located in the world, how many have you lost already, what part of the body is that injury on, was it caused by a predator and was the flock caught canabalizing the bird.. if so was the bird deceased before the flock became interested. Is the flock acting weird like hiding?

It does look a bit like pecking wounds.. possibly from a bird of prey depending on the other information presented. Even rats can be the culprits. Doesn't look like what I might expect from a raccoon or dog/coyote, etc. I'm certainly not a predator expert.. but these questions and answers might help another poster hone in more easily on the issue at hand.

Raccoons will tear open the breast like that to eat the organs. They will return until you close the restaurant. If you free-range, you'll need to confine them. Otherwise, look for holes in your coop and run. Raccoons are like cats. If they can fit their heads into a hole, the rest can squeeze in after.
